  • Ingredients

    • 1 tbsp oil

    • 12 oz. soyrizo

    • 1 cup cooked potatoes, mashed

    • 1/2 cup shredded Monterey jack cheese

    • 8-10 corn tortillas

    • Avocado oil spray

    • Shredded lettuce, garnish

    • Sour cream, garnish

    • Cotija, garnish

    • A Dozen Cousins Refried Pinto Beans

  • Instructions

    • Heat oil in a medium skillet over medium heat. Add soyrizo and cook for 10 minutes, or until slightly crispy.

    • Add mashed potatoes and shredded cheese. Stir to combine and cook until cheese is completely melted. Set aside to cool slightly.

    • Wrap corn tortillas in a wet paper towel and warm up in the microwave for 30 seconds.

    • Place about 1/4 cup of the soyrizo-potato mixture onto one half of a corn tortilla and fold the other half over the mixture. Repeat until there is no more soyrizo-potato mixture left.

    • Place tacos into air fryer and spray both sides with avocado oil. Air fry at 400 degrees F for about 10 minutes, or until crispy. Flip halfway through. Repeat until all tacos are cooked.

    • Garnish with sour cream, shredded lettuce, and cotija cheese.

    • Serve alongside A Dozen Cousins Classic Refried Pinto Beans.
