• 1 pouch A Dozen Cousins Cuban Black Beans
• 4 nopales paddles, diced
• 2 cups fresh corn kernel, cut from cob
• ½ white onion, diced
• 1 lime, juiced
• ¼ cup cilantro, chopped
• ¼ cup queso fresco OR cotija
• 2 tbsp avocado oil
Instructions
• Heat avocado oil in a medium skillet or cast iron pan over medium-high heat. Add onion and saute for 3-5 minutes or until translucent. Add nopales and corn and saute for 15-20 minutes, or until browned and charred.
• Remove the mixture from the heat and add to large bowl. Add 1 pouch of A Dozen Cousins Cuban Black Beans, the juice of 1 lime, and roughly chopped cilantro. Crumble cotija or queso fresco into mixture. Combine and season to taste.
• Add extra cilantro and queso fresco/cotija for garnish. Enjoy warm or cold with chips or as a side!
