- Ingredients:
- 1 tbsp olive oil
- 1 diced green bell pepper
- 1 diced white onion
- 2 sweet potatoes
- 1 cup cooked lentils
- 1 package of A Dozen Cousins Mexican Cowboy Pinto Beans
- 1 16oz can crushed tomatoes
- 1 ½ cups vegetable broth
- Chili powder
- Smoked paprika
- Cumin
- Instructions:
- Heat olive oil in a large pot over medium-high heat.
- Add in diced onions and peppers and saute for about 10 minutes.
- Mix in sweet potatoes, cooked lentils, 1 package of A Dozen Cousins Mexican Cowboy Pinto Beans, crushed tomatoes, vegetable broth, and spices.
- Stir to combine and continue cooking for 30 minutes, or until cooked to desired consistency.
- Serve and enjoy!
