Ingredients: 1 tbsp olive oil 1 diced green bell pepper 1 diced white onion 2 sweet potatoes 1 cup cooked lentils 1 package of A Dozen Cousins Mexican Cowboy Pinto Beans 1 16oz can crushed tomatoes 1 ½ cups vegetable broth Chili powder Smoked paprika Cumin Instructions: Heat olive oil in a large pot over medium-high heat. Add in diced onions and peppers and saute for about 10 minutes. Mix in sweet potatoes, cooked lentils, 1 package of A Dozen Cousins Mexican Cowboy Pinto Beans, crushed tomatoes, vegetable broth, and spices. Stir to combine and continue cooking for 30 minutes, or until cooked to desired consistency. Serve and enjoy!
