Sweet potato and lentil chili with Mexican Pinto Beans

                                 

  • Ingredients:
    • 1 tbsp olive oil 
    • 1 diced green bell pepper
    • 1 diced white onion 
    • 2 sweet potatoes 
    • 1 cup cooked lentils
    • 1 package of A Dozen Cousins Mexican Cowboy Pinto Beans 
    • 1 16oz can crushed tomatoes
    • 1 ½ cups vegetable broth
    • Chili powder
    • Smoked paprika
    • Cumin
  • Instructions: 
    • Heat olive oil in a large pot over medium-high heat.
    • Add in diced onions and peppers and saute for about 10 minutes.
    • Mix in sweet potatoes, cooked lentils, 1 package of A Dozen Cousins Mexican Cowboy Pinto Beans, crushed tomatoes, vegetable broth, and spices. 
    • Stir to combine and continue cooking for 30 minutes, or until cooked to desired consistency.
    • Serve and enjoy!
