Ingredients: Oil (for frying) 2 large green plantains 1 tbsp oil ½ green bell pepper diced ½ red bell pepper diced ½ small white onion diced 2 cloves of garlic chopped 1 tomato diced 1 package of A Dozen Cousins Cuban Black Beans Salt and pepper to taste Instructions: In a large pot, heat frying oil over medium-high heat. Peel green plantains and cut into 2 inch pieces. Fry plantain pieces for 5-6 minutes. Remove the plantains from the oil and let cool for a couple of minutes. With a muffin pan, mold plantains into cups. Carefully remove the plantain cup and re-fry in the hot oil until golden brown. Remove the cups and drain on paper towels and sprinkle with salt. Heat 1 Tbsp of oil in a large skillet over medium-high heat. Add onions and bell pepper and saute for 5-10 minutes. Add the garlic, tomato, and 1 package of A Dozen Cousins Cuban Black Beans. Stir to combine and saute until liquid has cooked down. Season to taste. Remove the bean mixture from heat. Spoon the bean mixture into plantain cups. Garnish with cheese or green onions.
