- Ingredients:
- Oil (for frying)
- 2 large green plantains
- 1 tbsp oil
- ½ green bell pepper diced
- ½ red bell pepper diced
- ½ small white onion diced
- 2 cloves of garlic chopped
- 1 tomato diced
- 1 package of A Dozen Cousins Cuban Black Beans
- Salt and pepper to taste
- Instructions:
- In a large pot, heat frying oil over medium-high heat.
- Peel green plantains and cut into 2 inch pieces.
- Fry plantain pieces for 5-6 minutes. Remove the plantains from the oil and let cool for a couple of minutes.
- With a muffin pan, mold plantains into cups.
- Carefully remove the plantain cup and re-fry in the hot oil until golden brown.
- Remove the cups and drain on paper towels and sprinkle with salt.
- Heat 1 Tbsp of oil in a large skillet over medium-high heat.
- Add onions and bell pepper and saute for 5-10 minutes.
- Add the garlic, tomato, and 1 package of A Dozen Cousins Cuban Black Beans. Stir to combine and saute until liquid has cooked down. Season to taste.
- Remove the bean mixture from heat.
- Spoon the bean mixture into plantain cups.
- Garnish with cheese or green onions.
