Plantain Cups with Black Beans

                        

  • Ingredients:
    • Oil (for frying) 
    • 2 large green plantains
    • 1 tbsp oil
    • ½ green bell pepper diced 
    • ½ red bell pepper diced 
    • ½ small white onion diced 
    • 2 cloves of garlic chopped 
    • 1 tomato diced 
    • 1 package of A Dozen Cousins Cuban Black Beans 
    • Salt and pepper to taste
  • Instructions: 
    • In a large pot, heat frying oil over medium-high heat.
    • Peel green plantains and cut into 2 inch pieces. 
    • Fry plantain pieces for 5-6 minutes. Remove the plantains from the oil and let cool for a couple of minutes. 
    • With a muffin pan, mold plantains into cups.
    • Carefully remove the plantain cup and re-fry in the hot oil until golden brown.
    • Remove the cups and drain on paper towels and sprinkle with salt. 
    • Heat 1 Tbsp of oil in a large skillet over medium-high heat.
    • Add onions and bell pepper and saute for 5-10 minutes.
    • Add the garlic, tomato, and 1 package of A Dozen Cousins Cuban Black Beans. Stir to combine and saute until liquid has cooked down. Season to taste. 
    • Remove the bean mixture from heat.
    • Spoon the bean mixture into plantain cups.
    • Garnish with cheese or green onions.
