- Ingredients:
- 2 tbsp olive oil
- 1 pound ground meat
- 1 white onion, diced
- 1 green bell pepper, diced
- ½ cup chopped cilantro
- 2 cloves of garlic
- Salt and pepper to taste
- 4 ripe plantains
- Frying oil
- 1 package of A Dozen Cousins Cuban Black Beans
- Shredded cheese
- Green onion, chopped
- Hot sauce
- Instructions:
- Preheat the oven to 350 degrees F.
- Heat olive oil in a large skillet over medium-high heat.
- Add ground meat, onions, bell pepper, cilantro, garlic, salt & pepper into the skillet. Cook beef until browned and set aside.
- In a large pot, heat frying oil over medium-high heat.
- Peel the plantains. Fry whole plantains for 8-10 minutes or until golden brown. Drain on paper towels and let cool.
- Once the plantains are cool, using a knife, cut a slit down the middle of the plantain just enough to open and make space for filling. Scoop out any extra plantain to make room for more filling.
- Fill the plantain with a couple spoonfuls of A Dozen Cousins Cuban Black Beans. Then add ground meat mixture and top with shredded cheese.
- Bake the stuffed plantains in the oven for 10-15 minutes, or until cheese is melted.
- Garnish with chopped green onion and hot sauce.
